Ingredients :
- 12 Eggs
- 3/4 cup sun-dried tomatoes
- 1 cup shredded mozzarella cheese
- 4 large basil leaves
- 1 tsp salt
- 1/2 tsp pepper
- Spray avocado oil
Instructions :
- Preheat oven to 400F
- Spray an oven safe casserole dish with avocado oil to grease. I used a 13″X9 ” pan if you have a different size you may need to increase cook times
- Crack 12 eggs directly into the greased casserole and whisk together
- Cut sundried tomatoes into small strips
- Sprinkle cheese and tomatoes onto the whisked eggs and stir gently
- Season with salt, pepper and strips of fresh basil
- Bake in the oven for 30 minutes
- Allow to cool slightly and then cut into 12 even squares
- Store in the refrigerator for up to one week
