Total Time: 35 Minutes, Servings: 3 Servings

Ingredients :
  • 1 cup Orzo
  • 2 cups Vegetable Stock
  • 30 ounces Red Enchilada Sauce
  • 15 ounces Frozen corn
  • 15 ounces Canned Black Beans
  • 1 tbsp Taco Seasoning
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt



Instructions :
  • Combine orzo, broth, enchilada sauce, corn, beans, and seasonings in a large nonstick (or well-greased) pot and stir to combine. Cover and cook over medium-low heat 20-25 minutes, until liquid is absorbed and orzo is tender.
  • Uncover, stir, and serve. Add any desired toppings and serve. I suggest nutritional yeast (cheese to make it non-vegan), avocado, green onion, hot sauce, etc.
