Ingredients :
- 1 cup Orzo
- 2 cups Vegetable Stock
- 30 ounces Red Enchilada Sauce
- 15 ounces Frozen corn
- 15 ounces Canned Black Beans
- 1 tbsp Taco Seasoning
- 1 tsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
Instructions :
- Combine orzo, broth, enchilada sauce, corn, beans, and seasonings in a large nonstick (or well-greased) pot and stir to combine. Cover and cook over medium-low heat 20-25 minutes, until liquid is absorbed and orzo is tender.
- Uncover, stir, and serve. Add any desired toppings and serve. I suggest nutritional yeast (cheese to make it non-vegan), avocado, green onion, hot sauce, etc.
